Duties and responsibilities include:
- Manage the kitchen in the absence of the Head Chef
- Assist the Head Chef in the daily management of prep & service; as well as the costing of menus
- Ensure that all dishes are served at the correct portion size, quality & temperature – manage the pass
- Ensure that all products purchased are to our exacting & high standards
- Assist the Head Chef with maintaining stock levels; ordering of stock; monitoring of deliveries & maintaining availability of menu items in accordance with stock levels
- Develop & maintain excellent relationships with our suppliers
- Accurate recording of wastage with reasons
- Maintain all HACCP & health & safety guidelines within the kitchen
- Ensure & maintain a very high standard of service at all times.
- Establish the kitchen as a positive work environment for all
- Attend weekly kitchen meetings
- Communicate recruitment needs to HR & the Head Chef in a timely manner
- Communicate staff issues to HR & the Head Chef as soon as they arise
- Communicate & manage staff rotas
- Train & develop junior kitchen staff in compliance with our training & development plans
- Attend training as required by our training & development plans
Our minimum requirements:
- Qualification as a cook/chef essential
- At least 3 years’ experience in a restaurant kitchen as a line cook
- At least 1 years’ experience in a similar role
- Proven kitchen knowledge and skills
- Proven ability to manage inventory & stock
- Excellent knowledge & proven implementation of HACCP & food safety & hygiene
- Exceptional interpersonal skills & a proven ability to work within & manage a team
- Multi-lingual: English is a must with additional South African languages
